Almond cookies

Ingredients


  • 250g almonds

  • 50g sugar

  • 1tsp (8g) baking power

  • 2 eggs

  • 1/2 shot glass cognac

  • Extra Nuts crushed to put inside cookies (optional)

  • Icing sugar

  • Aromatics (rose water or vanilla or almond etc according to your taste)

Method

Blend the almonds to a fine powder or buy ground almonds from supermarket (there are bags of 250g).

In a bowl add the ground almonds, the sugar, cocoa, baking powder, cinnamon and mix well. Extra crushed nuts can be added inside the mixture if you want a more nuttier taste.

Add the eggs and mix well so mixture to become like a firm paste.

In another bowl add enough quantity of icing sugar.

Make equal size balls (about 50g each one) and roll each one in the bowl with the icing sugar to cover them with the icing sugar,

Place each ball in a tray with parchment paper.

Bake in a preheated oven at 180C for about 15min.

Notes

Gluten free. No flour used. Made with 100% ground almonds. Contain eggs and sugar.
